先日、みいの寿、研醸(株)2社合同開催の酒蔵びらきにお邪魔しました。
実はこの2社、細い道を挟んでお向かいにあり一度に酒と焼酎を味わうことができるお得な蔵開きでした。
研醸さんの代表銘柄はにんじん焼酎「珍(めずらし)」。にんじん焼酎を造るのに補助的に麦焼酎も必要になるので、麦焼酎も製造販売しています。

世界中で栽培されている「シャルドネ」。
やはりお手本はブルゴーニュのそれだと思います。
以前、同じ造り手の「シャルドネ・ピノノワール」を扱っておりました。シャルドネとピノノワールを用いた珍しい白ワインで、価格の割りに品質が高いワインだったのに惜しまれつつ終売。
その後継のつもりでテイスティングしましたが、香草、パッションフルーツ、リンゴ、白桃などのニュアンス。樽発酵によるものか、心地よいトーストの香りがあり食欲をくすぐります。アタックにシナモンなどのスパイシーさがあるのに対し、きれいなミネラルが余韻を飾るような印象。
説明にブルゴーニュを用いた方がわかりやすいくらいに複雑さのある、完成度の高いワインだと思います。

※槽掛けとは・・・。
発酵したもろみを酒袋に詰め、槽(※ふね)という大きなバスタブ状の容器の淵にぶら下げて引力に任せ落ちてくる澄んだ酒を採ったもの。
搾れる量が少ないので高精米の鑑評会出展用の酒などに用いられる搾り方。

おなじみ「大山特別純米酒」のもろみを槽掛けで搾り、雫採りにした生酒を澱が沈んだタイミングで濾過も度数調整のせずに生のまま瓶詰め。
その後、瓶に入ったまま火入れ処理を施しただけのお酒です。
首掛けのタイトル「槽掛け特別純米生原酒無濾過生詰後瓶火入」というには、こういう意味が込めてありました。

通年の大山特別純米と飲み比べてみてください。同じもろみからできるお酒も、搾りの違いでまるで別の表情を現します。
