先日、みいの寿、研醸(株)2社合同開催の酒蔵びらきにお邪魔しました。
実はこの2社、細い道を挟んでお向かいにあり一度に酒と焼酎を味わうことができるお得な蔵開きでした。
研醸さんの代表銘柄はにんじん焼酎「珍(めずらし)」。にんじん焼酎を造るのに補助的に麦焼酎も必要になるので、麦焼酎も製造販売しています。

蔵の立地する、基山町内の農家さんの作る山田錦を50%磨いた純米吟醸酒、おりを残したまま瓶詰めしているので残った酵母が発酵し、若干の発泡があるのが特徴。
口当たりに滑らかな泡と甘さを感じるので、果物やクリームを使ったお菓子などと相性がいいと思われます。
開栓の際、噴出す可能性があるので、しっかり冷やしガス圧を落として少し気をつけて開けてください。

世界中で栽培されている「シャルドネ」。
やはりお手本はブルゴーニュのそれだと思います。
以前、同じ造り手の「シャルドネ・ピノノワール」を扱っておりました。シャルドネとピノノワールを用いた珍しい白ワインで、価格の割りに品質が高いワインだったのに惜しまれつつ終売。
その後継のつもりでテイスティングしましたが、香草、パッションフルーツ、リンゴ、白桃などのニュアンス。樽発酵によるものか、心地よいトーストの香りがあり食欲をくすぐります。アタックにシナモンなどのスパイシーさがあるのに対し、きれいなミネラルが余韻を飾るような印象。
説明にブルゴーニュを用いた方がわかりやすいくらいに複雑さのある、完成度の高いワインだと思います。

オールシーズン楽しめそうな、お手ごろスパークリングワイン。
シャルドネ、ピノノワールというスパークリングの基本的なセパージュに、カベルネソーヴィニヨンやシラーズ、グルナッシュなどの品種でコクの肉付けしているような印象。
「コク」と「喉越しの軽さ」のバランスが非常に優れたスパークリングワインです。
全量マロラクティック発酵、アッサンブラージュ後は澱とともに1年間熟成させ、門出のドサージュも1Lあたり9.7グラムとごくわずか。

※槽掛けとは・・・。
発酵したもろみを酒袋に詰め、槽(※ふね)という大きなバスタブ状の容器の淵にぶら下げて引力に任せ落ちてくる澄んだ酒を採ったもの。
搾れる量が少ないので高精米の鑑評会出展用の酒などに用いられる搾り方。

おなじみ「大山特別純米酒」のもろみを槽掛けで搾り、雫採りにした生酒を澱が沈んだタイミングで濾過も度数調整のせずに生のまま瓶詰め。
その後、瓶に入ったまま火入れ処理を施しただけのお酒です。
首掛けのタイトル「槽掛け特別純米生原酒無濾過生詰後瓶火入」というには、こういう意味が込めてありました。

通年の大山特別純米と飲み比べてみてください。同じもろみからできるお酒も、搾りの違いでまるで別の表情を現します。

最近「雄町」とラベルに表記した酒を特によく目にするようになりました。
繁桝の雄町は、豊潤で膨らみとコシのある味わい。この酒は生酒ですが飲まれる際にはぜひ、電子レンジを使ってもいいのでぬる燗を試してください。※保管は冷蔵でお願いします。
冷やして保存するから「冷酒」なので冷やしたまま飲まないといけない。というのは大間違いで、少しボディのある生酒は風呂湯より少し低めの温度にすると表情ががらりと変わり、それを楽しむのも一興かと思います。
